The Intrepid Eater and Wildgame Sushi with Adam Berkelmans

On this episode of Huntavore, Nick is joined by The Intrepid Eater, Adam Berkelmans. Adam is a self taught cook who has a passion for wildgame, growing and foraging, and making amazing dishes out of both. Together, these guys chat about some deep topics related to self-sustainability, responsible meat-eating, and finish up on a fun way to serve wild game, in sushi rolls. All this and more on the next episode of Huntavore.

Adam Berkelmans hails from Ontario, Canada. He took his passion of hunting, fishing, and foraging and mixed it with love of cooking. Taking on the title of Intrepid Eater, Adam shares that with a little creativity, some self taught practice, and an adventurous spirit, wild game can be just about any dish that you desire.

Adam leads the discussion on an idea of responsible meat-eating. The thought is, if you only eat the most desirable cuts without the rest of the animal, then the waste and discarded parts would surpass what is taken. Head to tail eating of animals, not only provides a wealth of nutrients, but also stretches the use of that animal. Both Nick and Adam agree that if we are going to spread this idea, it has to be done by sharing recipes, encouraging others to try new things, wagging a finger and telling someone to keep their livers without first creating motivation would be not good.

On a lighter note, Nick asks about wildgame sushi. Adam has made several variations of what closely resembles Kimbap (Gimbap) , a Korean version of sushi, but with cooked and pickled items, rather than raw, in traditional sushi. The Crappie and Chips rolls he made was to stretch the use of one fish. Being notorious for not freezing well, Adam didn’t want to freeze the fish, but fried in a tempaura batter, followed up with fried potatoes and rolled it all in sticky medium grain rice and sushi seaweed paper. No special equipment is needed. Adam does have a bamboo sushi roll pad, but Nick plans to use a placemat. Use your inner McGyver to achieve the task. Want something else? Nick and Adam brainstorm that ground can be used as long as it’s cooked first as a burger patty, and slow braised meat can be placed in a line that holds itself together.

Sushi in itself is a full course in meal prep and presentation. All the elements are cut and sliced, raw ingredients cooked or pickled, and assembled so everything is square and can be sliced. Not the most efficient method, but for bringing some fun to the party, wildgame sushi is the perfect party meal. Mckenzie has been fortunate enough to hunt all types of game from across the world. Originally from Wyoming, he has hunted more common destinations like Africa and New Zealand, but has also ventured into less touristy corners of the globe like Russia and even Pakistan. Mckenzie loves hunting far away places, and has a passion for helping others experience these hunts that many consider out of their grasp.

John and Mckenzie talk about some of the main hurdles that stand in peoples way from booking one of these dream hunts. They also talk about ways to navigate those hurdles, and make them less daunting. They discuss hunting Africa in quite a bit of detail since it is one of the more popular destinations, but Mckenzie also suggests some other destinations and game species that might interest someone looking for a more out of the ordinary experience. Also covered in the podcast are travel tips for taking a gun or bow abroad, and tips on how to get your trophies back to you in good condition.

Pennsylvania Woodsman - Food Plot Prep with Herbicides, Fertilizer, and Clover Management

With warmer temperatures approaching, cabin fever is beginning to wear off. Spring will be here before we know it, and too often food plot planters stall to prepare for planting and maintaining their fields. On this week’s episode of the Pennsylvania Woodsman, Mitch shares detailed information for clover plot management, as well as weed control and fertility concerns everyone may face in 2022. To start, proper clover plot establishment and management is not always well addressed. Due to this, many spring planted clover plots fail due to the lack of context. Soils need to be properly prepared with no established weeds, and most importantly, need to be planted earlier than most would think. In addition, knowing what herbicide you can use on clover and the appropriate times is equally as important for maintaining longevity in established plots. Prepare for note taking!

The forecast of glyphosate herbicide availability in spring is uncertain, and the supply that is available may be significantly more expensive than normal. These challenges may lead to alternative measures. Mitch dives into his plans for how he will address last year’s fall planted plots with significantly less, or no glyphosate applied, and also without using tillage. This will require biological controls that choke out weed competition. Finally, Mitch scratches the surface on how fertility can be built overtime with little to no commercial fertilizer, as 2022 will prove to have abnormally high fertilizer prices. Plan now, and success will come in fall!

However, this week we're changing it up and covering David Miller's strategies for whitetail land management in mountain country.

The southeast is scattered with hills and hollers, with parts of Alabama, Tennessee, Georgia and North & South Carolina having legitimate mountains. One thing that landowners in these areas continuously talk about is the lack of ability to really cultivate those properties to grow giant whitetails. Whether it's bad soil, lack of sunlight, or just difficult to get planting equipment in there, there's a lot of reasons for this. This results in lack of nutrients and creates very nomadic deer movement. You may get mature bucks passing through, but they're going to be on the move. David tells us about the things he does to ensure that a buck has everything they need year round to live on his properties, and it's easier than you might think!

The Hunting Industry Isn't Doing Enough

You're probably on at least one form of social media. Instagram, Facebook, and now Tic Tok receive our attention at least one time of day. Whether you're waiting on a flight to take off, taking a dump, or ignoring your kids, many of us take to scrolling to see what's going on in the world. As hunters and outdoorsmen we often follow some of favorite content providers, influencers, TV Shows, and hunting brands to check out their latest hunting trips, new shows, or new products they're launching. But, have you ever noticed what they're not posting? I'll follow that up with a another question... How often do you see any content about conservation efforts or who to contact about anti-hunting legislation? From my experience, very minimal. In today's world just buying your tags isn't enough anymore. We ALL need to advocate for hunting and the outdoors, especially those with the biggest platforms and have the most "skin in the game". In my opinion this is should be mandatory. There are a lot of people out there working hard, I mean really hard, to protect the natural resource and the right we have to hunt them. Helping spread that message, could go a really long way.

Each carries slightly different attributes, disease, and issues for outdoorsmen and women, as well as live stock, wildlife, and more.  

Paul just got home from his week long trip to Nashville for the National Wild Turkey Federation conference. He recaps some of his favorite parts of the experience including the calling competitions, trade show, and more. While Paul was deep in the turkey life, Andrew continues to try and figure out how to use a mouth call, and patiently waits to get to the woods for some whitetail shed hunting. In this week’s episode of the Wisconsin Sportsman Podcast, Josh talks with Dave Owens of the Pinhoti Project about wild turkey conservation. Dave Owens is an avid turkey hunter known for his YouTube channel The Pinhoti Project, which documents his turkey hunts from Maine to Hawaii. While known for targeting longboards, often on public land, Dave has become a leading voice for wild turkey conservation.

For a time, wild turkey populations across the country were a massive success story of modern conservation practices. Unfortunately, many states have seen a decline in wild turkey populations over the last two decades. Before state agencies and hunters can begin to address declining populations, there are many questions that must be answered with sound research. Dave has used his platform to raise both awareness and funds for vital wild turkey research projects.

While many wild turkey research projects are currently in progress and many more are just getting off the ground, there are many things that the average Joe or Jane can do to help wild turkey populations in the short term. In this episode, Josh and Dave discuss the importance of holding ourselves and state agencies accountable, the responsibility turkey hunters have to advocate for wild turkeys and the places they all home, and how a mindset shift is necessary if the next generation is to enjoy the same opportunities to chase wild turkeys that we have today.

Next Level Mature Buck Hunting

In this episode, Jon Teater discusses with Steve Sherk of Sherk’s Guide Service how to break down a mature buck from start to finish. Steve has developed hunting tactics that work year in and out for him and his clients. Historical trail camera data and sticking with a deer through the years, and understanding his preferences ensures success down the road. Other topics such as how deer acclimate to changes, socially or otherwise, in their environments is critical to knowing where they will reside throughout the year and getting ahead of them during hunting season.

Developing a plan to harvest a mature deer is only as good as your ability to locate them, collect data and thoroughly evaluate their movements. Jon and Steve talk about summer and fall ranges, and how there are misnomers, especially when a hunting property is designed correctly. Of course, deer may change their movements and their general patterns at any time, so it's vital to evaluate a deer’s physical needs throughout the year.

Steve’s process and concept of clustering cameras and knowing a big buck’s behavior as they shift movement from early fall to breeding periods allows him to build a database of information that supports his hunting approach and ability to target mature deer. Steve is focused on big woods movement, but the strategies as discussed will apply to most locations. Steve explains that it is important to not get discouraged and hunters' agenda to hunt should be linked to when deer are consistently using areas. Further, understanding the whys behind deer movement is crucial. Steve ends with some great suggestions on how to break down a mature buck’s area and how he killed a giant Pennsylvania buck during the rut.

Are Your Deer Starving to Death?

On this week’s episode of the Pennsylvania Woodsman, Mitch has a conversation with Kip Adams. Kip is a biologist and the Chief Conservation Officer for the National Deer Association (NDA). Prior to Kip’s engagement with the Quality Deer Management Association and NDA, he was the deer project leader for New Hampshire Fish & Game Department. New Hampshire, as well as many other states in the northern portion of the whitetail deer’s home range, is not immune to severe winter weather having an impact on the local herd. Kip was involved in numerous surveys in New Hampshire monitoring winter areas as well as mortality.

In addition to the wealth of knowledge regarding whitetail biology, Kip is a Pennsylvania native who finds himself hunting property he manages in northern Pennsylvania. He can relate to the weather patterns in the Keystone state and how they may impact winter survival. Kip explains that providing winter food for deer is not a reactionary process – it takes planning ahead to manage plant communities accessible to the deer herd this time of year. However, as many landowners begin to hit the panic button during these harsh conditions, they will find themselves making the mistake of piling food. Commonly, corn piles and hay bales get places near wintering yards, and while this is intended to be a positive deed, it can result in disease, predation, and higher rates of mortality. This opens the door up for someone who is not "local" to come in and purchase the land, then cash rent the farming, and either lease up the hunting rights or they themself hunt, and leads to displacement of local hunters, thus leading to less hunters. Just thinking outloud."

Then Dan breaks down what is is looking for when he heads out to the woods for his post season scouting sessions. Stem count on vegetation, floating trails, looking for old sign and if it is important, along with several other observations that play a huge role when scouting.

On this episode, Jon Teater and Anthony Barnum, Outdoor Writer and Gear Guru, discuss owning land, and the factors that led them to buying property. Buying land can be one of the most involved and complicated endeavors we go through as individuals and can be taxing and liberating all at the same time. In this discussion we get into the pitfalls and benefits of owning land. Anthony breakdowns what he’s doing on his land to improve it and his number one improvement he believes most should consider after purchasing property. Anthony is focused on maximizing his land and receiving a benefit hunting wise via logging. Anthony has taken it on himself to mark timber and layout a logging plan to include some enhancements that will increase deer interest over time.

If you are considering buying land or are fortunate to hunt on family property this episode discusses the thoughts, attitudes, and the concessions we sometimes must make in order to find a balance between meeting goals and keeping healthy relationships with family and friends. It’s important to be realistic and find success in our own ways and don’t forget that goals can be set but may need to be rethought in order to be achieved. Anthony and Jon discuss family and bringing children up with hunting and how they are approaching things differently from how they were taught.

Further, Anthony and Jon discuss working with neighbors; this include strategies you may consider that could help push your agenda in the locality. Understanding that we sometimes might deal with highly pressured ground, especially during gun season, can be a major detractor, but we must work through these frustrations and be keen on when the time is right to go after the deer we want to harvest. Anthony advocates that looking for other properties and evaluating areas that may be more aligned with your goals. Selling land may be a consideration for some, but Anthony is playing the long game on his properties and he hopes that his current and future improvements will help him meet his goals.

During our 2021 elk season, the Missouri Woods & Water crew crossed paths with our new friend Will Judson. Will was out in Colorado at the same time as us chasing his dream of harvesting an elk with his bow, and he was by himself. Will's story should be an inspiration to anyone who has excuses as to why they don't or can't do things. Will had only even been a hunter for a few years before this, had no one to go with him in a daunting place, but yet he still was determined to work hard and get it done. Well, spoiler alert, he got it done and that's where we met him. Another awesome aspect of Will's story is the friendships that were made as our paths crossed on that random trail. None of this happens if Will decided that he couldn't do it and stayed home on his couch. Get out there and do want you want to do. It's there for the taking, you just have to take it. Congrats on an amazing accomplishment Will!

On this episode of Huntavore, Nick is joined by the Editor in Chief of Harvesting Nature, Justin Townsend. Justin lived down in the keys and had his fair share of cooking and eating saltwater fish. Now he resides in Colorado and has to tune his craft to fresh water. Nick asks about fishcakes, fish dips, and is there anything we can do with freshwater roe? To finish out, Nick and Justin brainstorm a smoked salmon “Dockside” pie. Get ready for some fish talk on this episode of Huntavore.

Justin Townsend recently moved to his new home in Colorado. While not bringing a large amount of game meat in this year, he has been exploring and putting the pieces of the puzzle together on his new hunting territories. Coming from the Keys, Justin has a huge knowledge base when it comes to fish. Nick struck gold on the ice and was able to haul in a 26.5” northern pike. With all the excitement, Nick wanted to pick Justin’s brain on some possibilities for the fish. The guys touch on the idea of fish cakes. It’s not a fancy nor even exciting dish, but could offer a good way to use a filet that got a bit mangled due to novice pike butchery. Blitz the pike, egg as binder, mixed in with bread crumb and whatever herb and spice, popped into the oven, air fryer, or oil will make what was dodgy into delicious. The next topic was freshwater roe. Opening up the belly of my pike, I saw a large amount of roe. Knowing the energy that goes into producing eggs from poultry, it only seemed fitting to try and use the effort this fish put into making eggs into something delicious. To round out the episode, Nick has an idea for a smoked salmon shepherd’s pie. However shepherd didn't seem right so it has been re-named dockside pie. Nick found some salmon filets in his freezer that needed to get used. Smoked salmon in itself is amazing, but making the meat candy into a dish sounds terrific. Keeping the filling simple, chopped onion, spinach, and salmon. Binding it all with a mild cheese sauce, and topping it with savory sweet potatoes makes a great wintertime belly filling meal.

This isn't your everyday trail camera conversation. If you're a deer hunter, chances are you own one or several trail cams. If we're being honest most hunters really don't know how to use them effectively. Sure, you may get a picture of a big buck occasionally, but is it really teaching you anything other than the fact that he's in the area? This week we're joined by Jordan Pope who recently killed an 8.5 year old public land stud in Alabama. Jordan talks about how began narrowing down this buck's movements in the big woods and ultimately killed him in the late season.

The conversation is still on-going as far as where we personally draw the line on cell cams. It seems as though the art of woodsmanship can be lost when depending so heavily on new technology, however, Jordan explains the thought processes he uses when selecting the location of each camera and woodsmanship and understand deer behavior seems to still be at the top of his priorities. Whatever your thoughts on this, you can not deny how incredible this story is and the journey he experienced.

Using Trail Camera Data to Design Your Property

In this podcast Rocky Burrus from SA Farms Management Service, based in Tennessee, discusses how he evaluates trail camera data to support his continued success each season. Rocky works with clients throughout the southern United States helping them design and implement his property management plans.

Rocky runs trail cameras across his personal properties and those that he hunts. Rocky meticulously analyzes the deer he pursues. Documenting some basic information such as wind preferences, temperature, weather fronts, and most importantly keying in on daylight movement and connecting that information to understanding how deer are using his properties and those he designs.

The most important topic Rocky explains is how to take trail camera data and turn that information into actionable intel to hunt deer. Rocky discusses this topic in detail and most frequently sticks with times the property his “hot” and keys in on weather and frequency of use, many times, this is during the rut. Also, keying in on observations from afar can help confirm deer movement. Rocky expounds on annual patterns and Jon describes some key differences on the properties he designs and hunts in New York. Rocky has used trail camera data to enhance his farms and gain cyclical intel on the deer he goes after each year. Rocky explains the importance of fawn drop each year and his record keeping.

Rocky also builds his own box blinds that provide a great opportunity to hunt many different winds, and in some cases he’s able to “cheat” the wind. Most importantly, design hunting locations can be ruined if accessed or hunted with incorrect winds; this may throw off any annual or routine pattern of movement experienced on a property.

As we progress into winter and put boots to the ground this post season, it is never too late to be considering trail camera strategies for 2022. More often than not, I’ve personally found myself overwhelmed by vast big-woods landscapes and trying to place myself within archery range of a mature deer. Steve discusses the method behind his madness when scouting for trail camera locations, as well as how he positions multiple cameras for in-season monitoring versus data collection for future seasons.  The northern half of Pennsylvania is not typically known for high deer densities. But if you have followed Steve on social media for any length of time, you know that there are plenty of mature deer with racks respectable anywhere in the lower 48 states. Clustering cameras in and around known bedding and transition areas may allow you to capture more images in these big woods settings, especially when funnels and attractions are less pronounced.
