Have you ever dreamed of hunting exotic game in wild places? Well those dreams may be closer to home than you think. Scotti Campbell is the owner and operator of Top'o Texas Outfitters in the Davis Mountains of west Texas. Scotti has made a name for himself by being one of the few outfitters willing to tackle the near impossible task of chasing free range aoudad (also known as Barbary Sheep) spot and stalk style with a bow. Aoudad are one of many non native species who have flourished in Texas, and many who have hunted them consider them one of the toughest animals to hunt in North America. Part of what makes them so difficult to hunt is where they live. The Davis Mountains are as rough and rugged as they come, filled with cliffs and cactus. 

Scotti Campbell is one of the most genuine people you will ever talk to, and he and John have a great conversation about all the hunts Top'o Texas Outfitters has to offer. While they have become known for being a bow hunters paradise, including traditional archers, Scotti and his crew welcome all types of hunting for a variety of game. Today on the Michigan Wild Podcast, Marcus sits down with long time friend and outdoorsman, Dane Williams. Dane grew up spending much of his life outdoors in many capacities and even spent time guiding in Wyoming during his college years before settling down back in his hometown. The guys spend most of the conversation discussing the past season, and some of the great memories that came out of it. Dane talks about the approach he and his wife take to getting their kids outdoors and how they strive more than anything to just have fun while they're out there. The two talk about the many opportunities Michigan has to offer and how to make the most of all those situations. On this episode of Huntavore we sink our teeth into next level meat crafting.  Nick digitally sits down with Thea Lopatka, owner of Umai Dry.  Together they discuss old world meat crafting from the home kitchen.  Creating salamis, dry sausage, and dry aged large cuts of meats in a safe, easy to produce method of sealing ground meat or whole muscle into a synthetic bag or casing that allows air and moisture to pass through.  After talking about how beneficial bacteria, lowering pH, cure, and salt work as layers of safety, the discussion opens up to seasonings, rates of drying, and being able to enjoy and share a very unique treat that will certainly turn some heads, and get mouths watering.  Dig out those old chemistry notes, and make space in your fridge for this episode of Huntavore.

Umai Dry is a family owned business located in Minnesota, They were given the opportunity to work with a synthetic material that allows air and moisture to pass through and apply it to a use with food.  Thea, someone who is very educated on the subject of meat crafting, explains that by vacuum sealing a whole muscle cut in a bag, the meat can be dry aged.  A process that used to be reserved for curing chambers that needed to be cleaned and humidity regulated to prevent hard casing.  While it can be a good investment for a hobbyist meat crafter, most of us have a refrigerator in our kitchens.  The fine pores in the bag regulate moisture loss and oxidation, so by using a frost free refrigerator that conditions the air with a fan and compressor the aging can happen in your kitchen.  For charcuterie, salami, and dry sausage they process is much the same, with some added steps in the mixing process.  For salami and dry sausage, mixing in a bacterium culture and dextrose slurry works on the meat much like yeast works (yeast raising the dough with CO2, bacterium culture lowering the pH).

Note:  When I was making a batch of sujuk dry sausage I started in the garage fridge in an uninsulated shop.  Thea recommended bringing the sujuk into the house fridge. Merely for the reason that the fan and compressor would be working more than the garage fridge.  After making the switch I had my first sausage get to target weight (10 weeks).  Nick, is waiting 10 weeks to eat dry sausage worth it?  Honest opinion, ABSOLUTELY!

On this episode of the Nine Finger Chronicles, Dan talks with Matt Sherman about locating a honey hole on public land then shooting a big buck the following season. Matt talks about locating a ton of old sign from the rut while hunting and scouting later on in the season. He saved that information in his memory bank for the next year. This specific piece of public property had pressure from other hunters, so Matt knew that having a good strategy leading up to the best time of the year was important. Matt waited for the perfect conditions and used a well thought out access route to put himself in the perfect potion setting up in a triple trunk tree with great cover. The rest, as they say, is history. First time in, best time in!  

Sometimes things just fall into place during hunting season.  This week on the Pennsylvania Woodsman we chat with Troy Dietterich and reflect back on killing a Pennsylvania and Ohio buck during that magical window between late October and early November.  Troy is a hard working family man that loves to bow hunt.  He and Mitch converse about their faith in Christ and the constant battle of managing time in the woods without being overbearing on our loved ones.  While it's a battle that neither of them have figured out, it's something they believe needs constant attention and is relatable to many hunters out there.

Troy was able to purchase his dream home this past year with a chunk of land attached. Up until this point Troy has loved the thrill of chasing bucks in the mountains on public land.  While that passion still resides within him, he has adjusted slightly to include habitat manipulation and private land hunting strategy into his game.  We dive into how his preparation in Pennsylvania looked different and how he was able to connect on his largest buck to date on the new farm.  We then shift gears to discuss revisiting the thrill of public land hunting in Ohio.  Troy logged some scouting time in this area during the previous hunting season.  Having a general idea where he wanted to look upon arriving this fall, he scouted his way into a tree that produced a buck within 3 hours on day one.  This episode is all about adapting to the current situation and being a hybrid hunter!

Today on the DIY Sportsman podcast, Garrett discusses five of the best things you could be doing right now related to hunting. Seasons have ended in most midwestern states, and if you're towards the northern edge of that you've still got 1 to 2 feet of snow on the ground. Seems like ice fishing could be your best bet. But there are some pretty valuable activities that you can still do during the winter months. Some of the items include analyzing certain details of the 2022 hunting season, some are more forward thinking, and others are just a bunch of fun. 

This week we're talking with an absolute legendary deer killing machine, Jim Forbes. Jim has been hunting the mountains of Virginia for his whole life and has learned things that have upped his odds in the deer woods. Like so many local legends we've talked to in the past, Jim makes it clear that he's not hunting deer, he's hunting old mature bucks. Mr. Forbes continuously says "food is everything in these mountains", and for good reason. He talks with us about just how important it is to find the hot oak trees in the mountains, with red oak acorns being his personal favorite. This makes sense as he tells us that his most successful time is in the latest part of the rut. Several things stick out to us about Jim. First of all, he is very calculated about his approach. Hearing him talk about how he breaks down the monotonous big woods found in the mountains is nothing short of precise. Secondly, he places most of his confidence in the natural features he finds. If he finds the right vegetation or terrain feature that he knows mature bucks like, he has confidence that one day it will produce, even if it takes years. Lastly, he puts a lot of stock into knowing the area he's hunting from front to back, as any good woodsman should.

On this episode of The Nomadic Outdoorsman Dan talks with 6 guys that he spent the last 4 days with as they chased after birds in South Texas.

Dan along with good friends Brad and Shawn took several days to see what Texas has to offer the avid waterfowler. They spent a week chasing ducks and each got to experience a hunting first chasing the rib eye of the sky. Zach Waitcus and fellow guides Ben Heard, Holden Smith and Mac McDaniel put on a week they will never forget by guiding them on hunts from the coast to crop fields and even flooded timber in South Texas. This week on The Average Conservationist Podcast, Marcus sits down with Paul Campbell from the NWTF to talk about wild turkeys. Paul kicks things off talking about how he got introduced to the outdoors and how turkey hunting saved him when he was at a rough patch in his life. The guys talk about the great work NWTF is doing across the country to help restore the wild turkey population along with some of the things the organization has accomplished during their 50 year tenure. Paul closes things out talking about his biggest takeaway from the organization and it's an answer that anyone who hunts turkeys is going to love to hear. On this episode of the Nine Finger Chronicles, Dan talks with Garrett Johnson of Minnesota about his 2022 season hunting his small farm. Garrett kicks off the episode by sharing his excitement about hunting with his his kids and how both his boys found success this season. The conversation then turns to topics like the impact of crop rotation, the importance of finding the habitat sanctuary during the gun seasons, and the power vacuum hat happens when the dominate buck it taken off any given property.

Hey everyone, welcome to episode 155 of the Antler Up Podcast!

On this week's episode Dimitri and I were joined by Jared Shaffer from Tethrd.  Jared resides in West Virginia and over the last 3 years has been on some truly amazing hunts.  We kick off the episode with Jared sharing some information about how and what led to his success over the last two years killing 9 bucks in various states like OH, WV & IA to just name a few.  To wrap up our out of state hunting talk, Jared brings a wealth of knowledge to this episode.  We talk about how Jared manages his short and extended out of state hunts.  We discuss what he prioritizes during these specific hunts, from scouting, cell cameras, topography and everything in between. This was a great conversation regarding out of state hunting and hope if you are on the fence about doing one next year that this episode helps you out to just do it!  

For the second half of this episode we discuss Jared’s Iowa hunt from this past season.  We plan on doing a few episodes with hunters that are either a resident or non resident to Iowa that have hunted or hunt some Iowa giants.  Jared shares his whole trip with us from how many points it took to draw his tag, to having Rendell Erik as a great hunting partner, getting boots on the ground and calling in his biggest whitetail to date!  What a great story and way to kick off our mini Iowa chat!

Perry discusses his doe harvest method and what the Drury team uses to help support this methodology. Jon and Perry discuss how many deer could or should be harvested based on several techniques. Perry discusses when to shoot does each season.

Perry explains problems that he has noticed because the lack of doe harvests and how the farms he manages tends to attract more deer. Lightning can strike twice! This week on the Oklahoma Outdoors Podcast, John tells the story of his 2022 Archery buck. A buck he took on the same day out of the same stand as his archery buck in 2021! John had a little history with this big eight point, and even came close to shooting him with a rifle in 2021. The buck was a little more consistent in 2022, but nowhere close to being paternable. That all changed after the rut though when the buck became a slave to his stomach and started hitting a food source on a regular basis.

The big eight suddenly became one of the most consistent and paternable bucks John had ever hunted, something John has seen a lot during late season. He was so consistent in fact, that John had no problem being patient and waiting for the right time to hunt him. That patience almost cost John the buck however when hog hunters on horse back and a pack of dogs interrupted one of his hunts! In the end though, waiting was the right call, and three days after Chirsmas, John was finally able to punch his second Oklahoma buck tag on the big eight!

Typically after the end of firearms season, the majority of deer hunters have packed it up until next year. Those that pursue whitetails after Christmas with a bow or flintlock muzzleloader generally have less hunting pressure to deal with if you're able to endure the elements.  However, the herd that remains at this time of year is typically on edge; not to mention the landscape is barren providing less cover to conceal hunter movements.  Deer have been pushed into hiding spots that can seem to be like a dark hole at this time of year.  Finding these pockets can be a challenge.

This week on the Pennsylvania Woodsmen we chat with Alex Krzywulak from the In The Presence YouTube channel.  Alex is a public land hunting fanatic that seems to get it done anywhere you put him.  However, this does not come without the hard work he puts in to prepare for hunting season by scouting.  Even though late season can isolate deer making them hard to find, he is not afraid to get aggressive during morning and evening hunts this time of year.  In order for this to be successful, he casts a large net, meaning he does not rely only on a few spots to capitalize.  He feels scouting a larger area early allows more places to check this time of year to A) find deer in the first place and B) have options to fall back on if he messes a spot up during his aggressive approach.  There is still time to fill a tag and Alex is no stranger to doing so this time of year, good luck!

It's a new year. It's cold outside. The rut is long over. The deer have been pressured hard all season. And you've still got a few tags left in your pocket. We all know that you need to find food and adequate cover to find late season deer. But most of the time, that's easier said than done. But there are a few folks out there that consistently take good bucks during the late season. What's their secret?

In this episode of the How to Hunt Deer Podcast, Josh talks with Johnny Stewarts about how he finds success when hunting deer in the late season.  Johnny has found late season success in several states. He certainly focuses on food and cover this time of year, but there are several factors that help him be consistent. Not all food and cover are of equal importance, and knowing how to tell the difference between the RIGHT food and cover and just OKAY food and cover is the difference maker. On this episode of The Western Rookie Dan talks with Thad Miller about Thad’s first successful year chasing elk in Colorado. Dan and Thad met at elk camp a few years back. Although Thad grew up small game hunting he recently got into big game hunting after marrying into a family of hunters. Up until this year Thad had helped pack out elk for other hunters at camp but hadn’t had an opportunity to take one for himself until the final day of the 2022 season. Dan and Thad discuss everything that went into shooting and recovering Thad’s first bull.

On this week's episode Dimitri and I were joined by Ian Senior.  Ian has been on the podcast before and if you didn’t get a chance to listen to that episode I’ll give you a quick run down on Ian.  Dimitri and Ian grew up together and have been hunting together for a long time.  You’ll hear references within this episode but Ian does not have social media and when you hear your friends talk about good hunters and guys that just straight up fill tags and no one really knows them…well Ian fits that bill to the T!  Ian is a great guy and a lot of fun to be around so I was really looking forward to  this podcast discussion.  

We briefly talked about how Ian took his son out hunting this archery and rifle season for the first time with the mentor license here in PA. Then we continued with our out of state discussions by having Ian and Dimitri break down their entire Ohio hunting trip.  Right before we dove into the Ohio trip discussion, Ian started his 2022 season at an outfitter in Canada for a bear hunt.  He was successful in bringing two bears home from that trip.  Following that we get into talking about some Ohio whitetails.  From their planning stage, to when they scouted, getting a campground pegged down and finally getting the chance to chase some Ohio whitetails during the week of Halloween.  Some really good takeaways in this episode from the different terrain features they hunted, the challenges they faced, what kind of sign they were finding or lack thereof and getting a chance to fill their tags.

Chris has spent time chasing bears, racoons, cougars and more all while working closely with his
four legged hunting partners. Chris breaks down the ideology of hunting with hounds, the
politics involved, and the overall hunting comradery behind the sport of hunting with hounds.
Paul and Andrew haven’t been up to much besides holiday festivities with the families. The
Buckeye game was a real shot to the you know what, so we won’t talk about that. Spent some
time with the families and our buddy Jacob from GoWild down at the Great wolf lodge. Fun
times had by all. Paul is gearing up for the last push of the season on a lottery property he has
access too.
The boys are headed to ATA soon and will hopefully bring back lots of new and fun things to

This week on the Oklahoma Outdoors Podcast, John has one of his most special guests of all time on, his wife Mackenzie. John and Mackenzie talk about the real life struggles of balancing hunting and family. After four years of marriage, and adding a baby into the mix this year, the two talk about what they do well, and areas they still need to improve upon when it comes to John's hunting addiction. Mackenzie knew John was a big hunter before they got married, but honestly had no idea what she was getting into on a full year around basis. Not to mention how it would get even more complicated by adding a baby into the mix.

Mackenzie talks about expectations, and how she has learned to be more upfront with John before the season even gets underway. John and Mackenzie have both learned how important communication is, and the more heads up the better. Mackenzie is a planner, while John is much more go with the flow. They have learned over time that the more they can plan ahead, the better it is for both of them. John has also had to learn that a baby really does change things, and that sometimes you really have to take a step back and think about your priorities in life.

To kick things off in 2023, Marcus is joined by Trevor Hubbs from the Armed Forces Initiative branch of Backcountry Hunters & Anglers. Trevor opens things up talking about what AFI is and their mission within BHA. The guys talk about the newly appointed liaison for Michigan and what types of events are planned for 2023.Trevor goes in depth about some of the events AFI hosted last year, the good things that came out of them and messages that keep him going. After spending more than 200 nights on the road or in the field last year, Trevor feels like 2023 primed for another great year of helping the Veteran community and our public lands. On this Episode of Huntavore it's just you and Nick kicking off 2023.  He goes into detail about a specific hind quarter cut, the eye round.  What are its characteristics, how tender is it, how it reacts to cooking, and chats about 2 successful dishes with this cut. Hope you're in the mood for asian.  Secondly, he touches on how small game is going to be a priority here while there is not ice yet, and elaborates about a “Stocktail” that can add a savory twist to your cocktail hour.  Get your appetite ready for this episode of Huntavore.

This episode is Nick breaking down the eye round cut from a hind leg.  The eye round is a wonderful cut to use when used correctly.  Long muscle grain, and very lean, the eye round is best treated as a whole cut or in the case of his two dishes, best sliced, marinaded, then seared.  On a scale of tenderness, Nick gives it a 3 out of 4 for being quite tender.  For cooking variability he gives it 2 out of 4, high quick heat is what we are going for.  Eye round serves as an almost perfect cut for a couple asian dishes.  A ramen bowl, that also uses your stock to create a broth, and a mongolian venison stir fry that was an absolute grand slam with Nick’s kids.  Here is the blog recipe for the Venison Ramen: https://sportsmensempire.com/blog/wildgame-ramen

Nick is also attempting to bring “stocktails” back into the cocktail hour.  In the 60’s along with the Bloody Mary, two drinks were made with their base being broth or stock.  The Bull Shot and Bloody Bull were stock and vodka, seasoned with salt and pepper, celery salt, and tabasco.  Nick made the switch to venison stock and adobo sauce and gave it the new name the “Buck Shot”.  For a play on tracking your deer, the “Blood Trail” is the Buck shot, served with frozen tomato juice or Bloody Mary Mix.  as the cubes melt, they release their flavor and spice, and as they melt further, the flavor gets stronger.  And just like trailing your hit buck, it finishes with a lot of excitement.  Look for both the Stir Fry and Stocktail recipes to be posted soon at the Sportsmen’s Empire Blog.

On this week's episode of the Pennsylvania Woodsman, we are discussing small game with Emily Boyd.  Emily is the small mammal biologist for the Pennsylvania Game Commission and she drops a wealth of knowledge on us!  We discuss some of the less common small game species discussed in the Keystone State including snowshoe hares, Appalachian cottontail rabbits, and eastern fox squirrels.  Most of these species provide liberal hunting opportunities, however, snowshoe hares only have a 1 week season between Christmas and New Years.  Emily shares with us some of the habitat types you may find snowshoe hares if embarking on this adventure!

In addition to general biology, we discuss one of the greatest threats to rabbits in North America; rabbit hemorrhagic disease.  This disease has already been found in domestic rabbits, but is quickly spreading into wild populations.  The concern is not "if" but "when" will it happen?  There is a high mortality rate with those that contract it, and drastic management changes may occur to combat this issue.  Find out what you can do as a conservationist to help address the problem!

On today's episode of the DIY Sportsman podcast, Garrett does a strategy review and analysis as a baseline for how to improve next year. He doesn't review any of the specific hunt details because those already have their own hunt breakdown episodes. This exercise is one that Garrett does each year with to help review and analyze what did or didn't work to try and improve for the following season. That action is something which can help anyone, and it's a useful tool even outside of deer hunting.

Garrett will plan on doing much of the same weapon type hunting next year, using a combination of traditional and compound hunting across a handful of tags. But there might be a change to the location of the earliest velvet hunt, and there will certainly be a change in the location of any firearms hunting. Garrett also talked about an additional strategy he'd need to employ to help be better prepared to tackle his pre-rut hunts next year.

GoWild has been a huge supporter of the Southern Ground Hunting Podcast, and this week week get to talk to one of the men behind the platform. Brad Lutrell is probably one of our favorite dudes around. Not only is a great businessman and marketing guru, he's also a great deer hunter. This week, Brad shares the story of his big 2022 Kentucky buck. Low acorn crop forced him to hunt his property different than in years past, and finding the right mobile saddle hunting setup made it possible. We say it a lot, but it doesn't matter if you're hunting public land or private land, going mobile is the way to go!

On this episode of the Nine Finger Chronicles, Dan talks with Josh Raley about their late season season hunting plan. Josh kicks off the episode by explaining how he scouted 6 miles of Georgia public land just to find absolutely nothing interesting. Josh also talks about his upcoming Alabama rut hunt with his family. Meanwhile in Iowa, Dan has two more tags to fill. Dan tells us about how many deer are on the farm he hunts and a slight dilemma he has to overcome if a broken mature buck shows up. Lastly, all Dan really wants to do is fill his freezer. In this episode of the Wisconsin Sportsman Podcast, Josh Raley and Pierce Nelles recap their year in the field and a few lessons learned along the way.

Hey everyone, welcome to episode 153  of the Antler Up Podcast!

On this week's episode Dimitri and I were joined by Tom Runscavage.  Tom resides in North Eastern PA and is an avid hunter.  From scouting a ton in the offseason to chasing whitetails in the mountains of PA, Tom also has a passion for hunting out of state.  Jim and I had the great opportunity to share camp with Tom out of state for an early season whitetail hunt.  Prior to that trip I was able to see how much time Tom puts into his planning and preparation.  So for this specific episode we wanted to kick things off with talking about just that!  How to start planning for an out of state hunt!  Before we dive into all that good stuff, Tom was able to hunt PA this year beginning at the end of October for 21 straight days.  Tom only missed 3 of those days and with all the grit and perseverance Tom killed a PA mountain buck on the last day of the archery season.  We began the podcast talking about his PA hunting but half way through we switched gears to discussing where to begin when planning your out of state trip!

Beginning with this episode we will be discussing some out of state hunts topics, strategies and stories over the next two episodes.  To break this episode down more with Tom, he shared the two most important aspects to planning a trip out of state and those two being “budget & time.” Tom breaks down his point system process, how he organizes everything for each state, the websites he uses to help him with draw-odds and some nearby states that can be a great chance to cut your teeth on out of state hunting!  Next week we have Dimitri and Ian on to run us through their OH trip where they tell their stories of their bucks and the planning that went into that. We have a doozie this week on the Oklahoma Outdoors Podcast. John did a little deer hunting over the weekend, and had one of the best and worst encounters of his entire deer hunting career. If you have listened to the podcast much, you might have heard him talk about the 2% buck. A big main frame 10 point ghost he has been after ever since he first laid eyes on the buck in 2018. He refers to the buck as the "2% buck" because every year he gives himself only a 2% chance of killing him. This year, the 7 year old buck shrunk from his previous typical 10 point frame to a 9 point, but still holds as much majestic wonder as ever. For the first time since 2018, John laid eyes on the buck this weekend. Not only did he see the deer, but he had a legit chance to harvest the buck! The events that unfolded next must be heard to be believed, and even then it sounds like a stretch.

That's not the only crazy encounter John had over the weekend though. What seemed like a chip shot on another mature buck turned into a nightmare. John had a buck that had been visiting a feed site for several nights in a row, and finally had the right conditions to go in for the kill. Yet again however, some crazy circumstances led to that deer living another day, and John still holding a tag in his hand with the season quickly winding down.

This week on the Pennsylvania Woodsman, we have a conversation with Jeremy Dismore and Dimitri Sidorick from the Antler Up podcast.  Both Jeremy and Dimitri are PA boys that love the challenges of hunting whitetails.  We catch up on their seasons and how Dimitri was able to fill multiple tags in PA and Ohio, and Jeremy's encounters with shooters throughout archery season and doe harvest during firearm season.  Throughout the conversation we bring to light how easy it is to add pressure on yourself to punch a tag with social media influencing our lives.  

It's nearly impossible to scroll through social media in the fall and not feel as though everyone has filled a tag except you.  Each season we all go in with some level of expectation, but is success truly measured by the kill?  It can be easy to allow doubt to creep in when the cards are not dealt in your favor.  But at the end of the day, embracing the chase along the way is a much better way to enjoy your hunting season.  Dimitri and Jeremy have had differences between their hunting seasons, but rest assured they both had a ton of fun all year long!

Jason and Dan met several years ago at an annual Fourth of July party call The White Trash Succotash Bash. It wasn’t until this year that they connected over guns and frisbees.
