On this Episode of Huntavore it's just you and Nick kicking off 2023.  He goes into detail about a specific hind quarter cut, the eye round.  What are its characteristics, how tender is it, how it reacts to cooking, and chats about 2 successful dishes with this cut. Hope you're in the mood for asian.  Secondly, he touches on how small game is going to be a priority here while there is not ice yet, and elaborates about a “Stocktail” that can add a savory twist to your cocktail hour.  Get your appetite ready for this episode of Huntavore.

This episode is Nick breaking down the eye round cut from a hind leg.  The eye round is a wonderful cut to use when used correctly.  Long muscle grain, and very lean, the eye round is best treated as a whole cut or in the case of his two dishes, best sliced, marinaded, then seared.  On a scale of tenderness, Nick gives it a 3 out of 4 for being quite tender.  For cooking variability he gives it 2 out of 4, high quick heat is what we are going for.  Eye round serves as an almost perfect cut for a couple asian dishes.  A ramen bowl, that also uses your stock to create a broth, and a mongolian venison stir fry that was an absolute grand slam with Nick’s kids.  Here is the blog recipe for the Venison Ramen: https://sportsmensempire.com/blog/wildgame-ramen

Nick is also attempting to bring “stocktails” back into the cocktail hour.  In the 60’s along with the Bloody Mary, two drinks were made with their base being broth or stock.  The Bull Shot and Bloody Bull were stock and vodka, seasoned with salt and pepper, celery salt, and tabasco.  Nick made the switch to venison stock and adobo sauce and gave it the new name the “Buck Shot”.  For a play on tracking your deer, the “Blood Trail” is the Buck shot, served with frozen tomato juice or Bloody Mary Mix.  as the cubes melt, they release their flavor and spice, and as they melt further, the flavor gets stronger.  And just like trailing your hit buck, it finishes with a lot of excitement.  Look for both the Stir Fry and Stocktail recipes to be posted soon at the Sportsmen’s Empire Blog.

On this week's episode of the Pennsylvania Woodsman, we are discussing small game with Emily Boyd.  Emily is the small mammal biologist for the Pennsylvania Game Commission and she drops a wealth of knowledge on us!  We discuss some of the less common small game species discussed in the Keystone State including snowshoe hares, Appalachian cottontail rabbits, and eastern fox squirrels.  Most of these species provide liberal hunting opportunities, however, snowshoe hares only have a 1 week season between Christmas and New Years.  Emily shares with us some of the habitat types you may find snowshoe hares if embarking on this adventure!

In addition to general biology, we discuss one of the greatest threats to rabbits in North America; rabbit hemorrhagic disease.  This disease has already been found in domestic rabbits, but is quickly spreading into wild populations.  The concern is not "if" but "when" will it happen?  There is a high mortality rate with those that contract it, and drastic management changes may occur to combat this issue.  Find out what you can do as a conservationist to help address the problem!

In this episode of the How to Hunt Deer Podcast, Josh talks with Sam Bilhorn of Whitetail Partners about habitat improvement and hunting strategy.

Over the last 16 years of bowhunting mule deer in a variety of landscapes across the western United States, Marlon has not only knocked down some giant bucks but has gathered priceless information that he has used in the creation of this app.

On today's episode of the DIY Sportsman podcast, Garrett does a strategy review and analysis as a baseline for how to improve next year. He doesn't review any of the specific hunt details because those already have their own hunt breakdown episodes. This exercise is one that Garrett does each year with to help review and analyze what did or didn't work to try and improve for the following season. That action is something which can help anyone, and it's a useful tool even outside of deer hunting.

Garrett will plan on doing much of the same weapon type hunting next year, using a combination of traditional and compound hunting across a handful of tags. But there might be a change to the location of the earliest velvet hunt, and there will certainly be a change in the location of any firearms hunting. Garrett also talked about an additional strategy he'd need to employ to help be better prepared to tackle his pre-rut hunts next year.

GoWild has been a huge supporter of the Southern Ground Hunting Podcast, and this week week get to talk to one of the men behind the platform. Brad Lutrell is probably one of our favorite dudes around. Not only is a great businessman and marketing guru, he's also a great deer hunter. This week, Brad shares the story of his big 2022 Kentucky buck. Low acorn crop forced him to hunt his property different than in years past, and finding the right mobile saddle hunting setup made it possible. We say it a lot, but it doesn't matter if you're hunting public land or private land, going mobile is the way to go!

On this episode of the Nine Finger Chronicles, Dan talks with Josh Raley about their late season season hunting plan. Josh kicks off the episode by explaining how he scouted 6 miles of Georgia public land just to find absolutely nothing interesting. Josh also talks about his upcoming Alabama rut hunt with his family. Meanwhile in Iowa, Dan has two more tags to fill. Dan tells us about how many deer are on the farm he hunts and a slight dilemma he has to overcome if a broken mature buck shows up. Lastly, all Dan really wants to do is fill his freezer. In this episode of the Wisconsin Sportsman Podcast, Josh Raley and Pierce Nelles recap their year in the field and a few lessons learned along the way.

Hey everyone, welcome to episode 153  of the Antler Up Podcast!

On this week's episode Dimitri and I were joined by Tom Runscavage.  Tom resides in North Eastern PA and is an avid hunter.  From scouting a ton in the offseason to chasing whitetails in the mountains of PA, Tom also has a passion for hunting out of state.  Jim and I had the great opportunity to share camp with Tom out of state for an early season whitetail hunt.  Prior to that trip I was able to see how much time Tom puts into his planning and preparation.  So for this specific episode we wanted to kick things off with talking about just that!  How to start planning for an out of state hunt!  Before we dive into all that good stuff, Tom was able to hunt PA this year beginning at the end of October for 21 straight days.  Tom only missed 3 of those days and with all the grit and perseverance Tom killed a PA mountain buck on the last day of the archery season.  We began the podcast talking about his PA hunting but half way through we switched gears to discussing where to begin when planning your out of state trip!

Beginning with this episode we will be discussing some out of state hunts topics, strategies and stories over the next two episodes.  To break this episode down more with Tom, he shared the two most important aspects to planning a trip out of state and those two being “budget & time.” Tom breaks down his point system process, how he organizes everything for each state, the websites he uses to help him with draw-odds and some nearby states that can be a great chance to cut your teeth on out of state hunting!  Next week we have Dimitri and Ian on to run us through their OH trip where they tell their stories of their bucks and the planning that went into that. On this episode of The Western Rookie Dan talks with Ryan Romero a Wyoming native and Colorado transplant about his passion for chasing bugling bulls in the mountains.

Ryan has been hunting and fishing since he could walk. His passion started during his first pheasant hunt with his dad. Ever since that moment he has lived for hunting and being in the backcountry. Dan and Ryan discuss the effects of points and hunting pressure on public land and what that means for our hunting future. Why does sometimes come into rattling sequences and how to approach hunting near bedding areas. Josh explains why deer are drawn to certain areas and how to take advantage of terrain and pinch points.

Josh explains hunting out of state, timing of when to select certain areas. Josh details how he breaks down an area and what he does and does not consider when he selects a hunting location. Josh explains how he evades hunting pressure on public property. Josh explains the non-obvious features that lead to better hunting, and how to assess hill country and strategies that drive decisions to hunt high value areas.  Josh explains why maps and topography are just the starting point to making actual hunting decisions that will lead to success. 

We have a doozie this week on the Oklahoma Outdoors Podcast. John did a little deer hunting over the weekend, and had one of the best and worst encounters of his entire deer hunting career. If you have listened to the podcast much, you might have heard him talk about the 2% buck. A big main frame 10 point ghost he has been after ever since he first laid eyes on the buck in 2018. He refers to the buck as the "2% buck" because every year he gives himself only a 2% chance of killing him. This year, the 7 year old buck shrunk from his previous typical 10 point frame to a 9 point, but still holds as much majestic wonder as ever. For the first time since 2018, John laid eyes on the buck this weekend. Not only did he see the deer, but he had a legit chance to harvest the buck! The events that unfolded next must be heard to be believed, and even then it sounds like a stretch.

That's not the only crazy encounter John had over the weekend though. What seemed like a chip shot on another mature buck turned into a nightmare. John had a buck that had been visiting a feed site for several nights in a row, and finally had the right conditions to go in for the kill. Yet again however, some crazy circumstances led to that deer living another day, and John still holding a tag in his hand with the season quickly winding down.

This week on the Pennsylvania Woodsman, we have a conversation with Jeremy Dismore and Dimitri Sidorick from the Antler Up podcast.  Both Jeremy and Dimitri are PA boys that love the challenges of hunting whitetails.  We catch up on their seasons and how Dimitri was able to fill multiple tags in PA and Ohio, and Jeremy's encounters with shooters throughout archery season and doe harvest during firearm season.  Throughout the conversation we bring to light how easy it is to add pressure on yourself to punch a tag with social media influencing our lives.  

It's nearly impossible to scroll through social media in the fall and not feel as though everyone has filled a tag except you.  Each season we all go in with some level of expectation, but is success truly measured by the kill?  It can be easy to allow doubt to creep in when the cards are not dealt in your favor.  But at the end of the day, embracing the chase along the way is a much better way to enjoy your hunting season.  Dimitri and Jeremy have had differences between their hunting seasons, but rest assured they both had a ton of fun all year long!

On this episode of The Nomadic Outdoorsman Dan talks with good friend and disc golf partner Jason Bromley about Jason’s first season hunting.

Jason and Dan met several years ago at an annual Fourth of July party call The White Trash Succotash Bash. It wasn’t until this year that they connected over guns and frisbees. Jason bough his first bow shortly after and began to practice for what would become an amazing first season of chasing whitetail deer from a saddle with his bow. Dan and Jason relive the hunts leading up to Jason first harvest of an awesome Southwest Missouri buck.

Hey everyone, welcome to episode 152  of the Antler Up Podcast!

On this week's episode Dimitri and I were joined by Jim D’Agostino.  Jim is a part of our team of Antler Up and we couldn’t wait to have him on the podcast to chat about his recent success during the last weekend of the PA rifle season.  Jim shares his story on the mountain buck and what a team effort the whole weekend trip is!  This was Jim’s second trip with our friends from Pertnear Outdoors out of NY for this hunt and Jim wanted this year to be a lot different than last year's trip.  He took the last half year to get himself in better shape and he mentions how that helped him when it came to pulling the trigger.  We discussed his 2022 season takeaways and how that will lead into this spring/summer preparation already.   

With Jim wrapping up the 2022 season with this buck, he plans on getting ready for the indoor season this year.  We will be doing a future episode where he finds the benefits of keeping yourself in “archery” shape.  In the meantime, if you are looking for a new set of arrows or need some bow work done and live in the eastern part of PA then be sure to check out Jim’s Keystone Precision Archery page! On this week’s episode, the guys sit down to talk with Greg Kazmierski of Whitetail Partners in Ohio.  Greg brings his past years of deer hunting to Ohio to work with the Whitetail Partner consulting service.  Greg’s passion for white tails is evident in his work with designing and helping land owners with their hunting properties. Greg is a Michigan native, who gives his insight on how to utilize different land features from swamps to ag fields, and everything in-between. Greg also has the ability to use drone technology for mapping properties and utilizing new technology to take your property to the next level. 

Paul was privy to a trip out west in the past week, where he got to do some special workouts with our friend Brayden from GoWild as well as the crew from Mountain Tough.  More info to come from Mountain Tough, but as we get closer to the New Year, now is a GREAT time to start thinking about healthy life style choices. 

Andrew spent a lot of time the past week cleaning up his deer skull which is now hanging proudly in the living room. The guys are wrapping up the year and gearing up for the holidays.  Deer numbers from the extended gun weekend are in, and King Coshocton continues to reign supreme. Not sure if there are really any deer left out there, but congrats to them for continuing to bring deer to the freezers. Some Walleye and Perch hatch numbers are in as well.  Central basin yellow perch numbers are still down, but the Western Basin is well above average for Walleye and Perch. 

For some, deer season is fading into the rearview (cue the weeping and gnashing of teeth). This means it’s time to branch out to a few new topics. Somehow, the Wisconsin Sportsman Podcast has yet to cover the topic of ice fishing. Today, we fix that with an entire episode devoted to ice fishing!

On this episode of The Western Rookie Dan talks with Pennsylvania native and Arizona transplant Stephen Tyrol about the differences and challenges of learning to hunt the west. Stephen grew up hunting in PA where there was no shortage of deer and seemingly unlimited tags. That all changed when he moved to Arizona and had to relearn most of the things that go into hunting. Having been in AZ for over 10 years Stephen has had the chance to hone his skills and increase his resume by chasing a wide range of game like bison, lion, elk, deer, javelina, antelope, coyote, bobcat, quail & dove. Dan and Stephen discuss the steep learning curve that comes with hunting the west as well as stories of hard work and success.

The number 200 is usually just a dream when it comes serious deer hunters. But in this case, todays guest Tom Peplinski, shares how he was able to knock down not one, but two huge bucks over 200". Tom talks about all of the habitat improvement work that he has done over the years to get the deer comfortable with the properties he hunts. Tom also talks about how he has focused on deer movement, not only during the hunting season, but following deer behavior throughout the entire year. Overall, Tom credits having patience, gathering information, and knowing when to put his strategy in to action that leads to his yearly success. This week we have a much needed change of pace on the Oklahoma Outdoors Podcast. Josh Taylor joins John to talk about the line of products he and his partner Morgan offer at Oklahoma Fowl Company. Deer season may be ending soon, but there is still plenty of time to get out there and hunt some waterfowl!

On this episode of Huntavore, the chat goes beyond the meat and dives into the extras: organs, bones, hides, venison tallow even.  Nick is joined by Canadian guide, wild edibles connoisseur, and all around culinary adventurer, Stevie_funfur.  Together they pick over the pieces that are usually an afterthought when processing venison.  Which organs are they keeping and how does Steve prepare his for the kitchen, how stock and broth are both super important, and some possible avenues for  deer tallow.  Time for us to pick over what's left and glean some tasty tidbits on this episode of Huntavore.

Steve is a guide, wild edibles teacher, and all around cool dude who loves to play with his food.  From forage to gardens, Steve is adding to his diet and taking less away from the grocery store and the established food system.  Nick sought out Stevie after following along with his instagram stories of aging his whitetail doe in the far north, actually using a space heater and blankets to keep her from freezing solid.  On top of that, he was keeping the hide, scraping and salting to give to a craftsman who could turn it into leather.  First being a super cool idea, Nick also wanted to turn the conversation into using those under-used bits that get lost in the whole process of getting a deer in the freezer. Organs and items from the gut pile and how that can be a very intimidating aspect of hunting.  Liver and kidneys were the focus.  Broth and stock was also a great chat because of all the value it provides as a dish base and a powerful way to intake nutrients.  Lastly the guys chat about the assumed bad flavored venison tallow.  While it has an amino acid that makes the fat coat the mouth, it can be used for a whole number of crafts and uses.  For more info on Steve, follow along with him on his instagram @stevie_funfur

On this episode of the Nine Finger Chronicles, Dan talks with Jarrod Carter of Illinois about two successful deer hunting seasons. Jarrod breaks down his last two archery season where he had the opportunity to chase a couple large whitetail bucks. The guys discuss the terrain these deer lived in and how they traveled across the landscape. The key to Jarrods success over the past tow years is from being able to understand trail camera pictures and the ability to pull useable information from them. This led to Jarrod identifying patterns in target buck movement, that led to him staying out of the property until he started to get daylight pictures, that led to him being in the right place at the right time with a big mature buck within shooting range. Most hunters have a polar reaction to the orange army and rifle season; you either love it or you hate it.  While the tactics and styles used in rifle season drastically vary compared to archery tackle, it is still an opportunity for hunters to share one commonality - enjoy creation and the pursuit of big game.  Mitch used to dread the 2 week firearm season as this meant added hunting pressure in his hunting area, complexity to archery hunting, and the remote possibility that a target buck could be harvested by someone else.  Over time though, he has realized that no one owns the deer we chase, and when one dies another takes its place.  So instead of allowing the opening of firearm season to dampen the enjoyment of deer hunting, Mitch embraces it with friends and family.

If you've ever made a bad shot on a deer, or worse, wounded and lost a deer completely, you know you'd likely give anything in that moment to know what happened to the deer. If this hasn't happened to you yet, keep hunting, it eventually will. Blood trails dry up. Weather conditions might make blood trailing impossible. In these moments, hunters have a few options. They can grid search the area, which blows the area out and risks bumping a wounded deer. They can call in a dog, which can be hit or miss and again risks spooking the deer. Or, they can call in a drone. Wait, what?!

Dan sits down to talk with his family about why this year of hunting in Wisconsin has been the best season to date. Dan and his brother Josh have been hunting for roughly 2 decades while Dan’s mom is on season 42 and his nephew just finished his first day hunting. Although they are all at different experience levels, one thing they have in common is they all successfully harvested deer in Wisconsin this season. On today's episode of the DIY Sportsman podcast, Garrett sits down with Troy Fowler (aka the Ranch Fairy) and Darrel Barnette, who some of you may have also seen on either the Ranch Fairy channel or watching the Hunting Public. Garrett put together a string jump timeframe dataset corresponding to arrow speed and time of flight for discussion. The data was derived entirely on video footage Garrett had from deer shot at inside of 30 yards, but mostly inside of 20. Much of the string jumping debate seems to revolve around longer shots and whether or not speed is irrelevant compared to how fast deer can react. But rarely do you hear people talk about the relationship for close range shots. The group discusses that topic and also some of the longer range unknowns. There's not really any agenda pushing in this episode. It's just open dialogue discussing a data set, how it might apply to your own decision making, what limitations are there, and what type of additional questions we still have and data we'd like to collect and analyze to continue to learn. 

David Lange of Minnesota hunts in a very high pressure area of the state that lives by the "if it's brown it's down" motto. With that said, David wanted to hunt an older age class of bucks, this means that he had to be willing to pass deer that he would normally shoot. And that, is the premise of this episode. David breaks down the neighborhood surrounding his 160 acre farm, the impact of adding row crops to the property, how the deer moved through their property, and ultimately having the guts to pass a good 2 year old buck. On this week's episode Dimitri and I were joined by Brandon Miller of The Everyday Outdoorsmen.  Brandon is a great individual and we love to have him on the podcast.  Make sure to check out his previous episodes with us from last year.  This episode we dive into late season topics.  Start out with catching up on life, then talk about his strategy when it comes to the late season.  Brandon will hunt late season here in PA as well as in Maryland. To go along with the tactic side of late season hunting, we discussed a few must-have pieces of gear when heading out during this time as well.  We wrap everything up with plans for hunting the last weekend of rifle in PA up in the big woods and keeping that positive mindset to just enjoy being in the outdoors.

This week the guys sit down to talk about the real life wild west show that Paul and Andrew participated in the past weekend.  As you all know, Paul loves the birds.  Turkey, waterfowl, doves, you name it, he loves hunting them.  Paul’s self admitted lack of white tail deer interest is alarming to Andrew, but comes with a few years of drought.  Well folks, that drought is over.  And when it rains, it pours.

Paul gives a play by play of what turned out to be a very productive morning at Killbuck Marsh on a controlled hunt.  Paul’s morning turned more into target practice than hunting, but the freezer has been filled!  The morning started with some frustrations, but as soon as the sun was up, those frustrations faded away, and quickly.

Deer season is winding down for many if not most, and it's time to sit back and reflect on our season. Did you get the buck you were after? This week on the Missouri Woods & Water podcast Nate & Andy get to talk with fellow Missourian Jake Kaullen about a 200+ inch deer he was able to punch his tag with this year.  Jake would have never even known this deer existed if he hadn't have just went hunting one time last season.  With no previous trail cam pictures of him and no one knowing of him, this deer was basically a ghost on the farm he hunts.  This season was more of the same.  Jake couldn't get confirmation of his existence until he was able to get one passing by series of pics on a trail cam he had placed.  Then the hunt was on and the rest was history.  Congratulations to Jake on a once in a lifetime deer.  This story is proof that the saying is true....."just go hunting" because nothing is going to happen if you don't.  Enjoy the show!

On this episode of The Western Rookie Dan talks with Chuck Petka about a final day elk tag that was filled during his first season at elk camp. Dan and Chuck met during the 2022 rifle season in Colorado. Dan and Chuck relive the events from the week and the culmination of a lot of hard work  and prep that went into Chuck’s first elk hunt. Throughout the week their group was fortunate to take 7 beautiful bulls 5 of which were taken by first timers.

Kenny details the significance of a forest management plan and how to consider short and long term options. Kenny explains problems that persist on a client property and how to attack complications to ensure goals are met. Forest management techniques and changes allow for the opportunity to increase and improve habitat for deer and other wildlife. Kenny explains mistakes that landowners make that can be remedied and options to improve a woodlot. Jon and Kenny discuss how to break down a property into zones. Kenny describes prescriptions to support changes that will make a forest setting more productive for deer and deer hunting. Jon and Kenny discuss bad decisions regarding logging that hinder a property and how money sometimes impacts our decisions too much.

Kenny goes through the entire process of analyzing a woodlot. Kenny details each item he considers with a client property, to include what species to remove. Kenny breaks down the option to remove trees, and what are some of the best treatment options to remove trees and brush. Kenny discusses chemical options and methods of hack and squirt, stump cutting, and basal bark spray.  Kenny explains how to remove specific tree species, and how to evaluate the understory and what steps are needed each year to make sure the property improves. Jon and Kenny discuss ways to improve the number of oaks on the landscape and evaluate strategies that will get the landowner ahead to produce more acorns and seedlings. Kenny explains methods to measure light and ensure enough light reaches the forest floor for regeneration. Jon and Kenny discuss balancing goals when thinking through each improvement, forest regeneration and what tree species should be maintained across the landscape for deer.

On this episode of the Nine Finger Chronicles, Dan talks with Josh Profitt about a 3 year search for a big public land buck. Josh talks about an unassuming piece of public land that had very low deer numbers and that held not one, but two, big antlered bucks. One of these bucks, given the name "Bones", caught the attention of Josh and one of his hunting buddies. At this point the game was on and the two of them started to scout, learn, and dissect the 500 acres this buck called home. There was a reason this buck felt comfortable on this piece of public, the cover was thick and almost impossible to access, so trail cameras played a huge role in learning this bucks annual pattern.

Over the three quest for "Bones", Josh had to overcome several obstacles like increased pressure when the word got out about this buck, even resulting in the loss of a couple friendships. This is an amazing episode that doesn't turn out the way you think it would.

With gun season over in Oklahoma and most states across the country, hopefully that means freezers are getting full. Now that you have all that beautiful red meat, it's time to think about what to do with it. This week on the Oklahoma Outdoors Podcast, John is joined by Sportsmens Empire brother Nick Otto, aka the Huntavore, to talk about all things venison and cooking. This is an episode you are going to want to take notes on!

Nick is an adult onset hunter, meaning he started hunting a little later in his life. While a lot of people learn to hunt first and then cook, Nick is quite the opposite. Nick got into hunting because of the food it provides, so it just makes sense that he cares so much about the great quality wild game can have if you take care of it. Nick and John discuss some basic venison prep, and Nick shares a few recipes you probably won't find in your grandma's old cook book.

This big buck story comes from Rick Legend of the Whitetail Experience.  Rick hunted hard this year with very few deer sightings but ended up with a mega on the ground.  He overcame several issues including poachers and a car accident with a drunk driver.

On this episode of the Nine Finger Chronicles, Dan talks with Brett Konan of Kansas of about losing his main hunting property but still shooting a big buck. Brett talks about how out of the blue, the land owner on one of the property he had been hunting for several years told him that someone from a different state made an offer to lease the property and that they accepted. The caught Brett off guard and left him with only one small property to hunt that he usually saved for his kids. Luckily, one of Brett's good friends came through in a major way and let him his family farm. Instantly, Brett hung a couple trail cameras to see what was moving around on the property, little did he know a giant was already living there. The rest, they say, is history. Excellent episode!
